What is ghee? Ghee is the perfect healthy cooking fat to use anywhere you would use butter or oil. Ghee is often considered an Ayurvedic “Liquid Gold” for its use in ancient India for its health properties for thousands of years, ghee offers a flavor of its own that’s one to remember. Ghee is highly potent so a little bit goes a long way, making it last longer than an equivalent quantity of butter. Bake, fry, saute, and change your diet for the better! How is ghee made? To understand how ghee is made you’ll need to know that butter is composed of three ingredients; butterfat, milk solids, and water. Ghee is made by melting and simmering butter until all the water evaporates and the milk solids settle at the bottom, the end resulting golden oil is meticulously strained though a series of fine mesh filters. Many people can’t tolerate dairy, but they are able to consume ghee. Casein, lactose, and milk solids are removed during the making of ghee. I,myself, am allergic to cow dairy, but tolerate ghee very well and I’m so thankful for that! Does it require refrigeration? No, which makes my favorite healthy fat a pantry staple for hurricane season!!! You heard that right! It’s great for hurricane season! The remaining liquid gold butter fat is very stable, giving it a high smoke point which makes it an excellent choice to use for frying, cooking, and sautéing and it can be stored without refrigeration for up to a year.
